Breadfruit Shepherd's Pie
Breadfruit Shepherd's Pie is a traditional Barbadian dish that combines the rich flavors of breadfruit, ground meat, and savory seasonings. This hearty and satisfying meal is perfect for a cozy dinner at home.
Ingredients
- 2 large breadfruits, peeled and diced
- 1 lb ground beef or lamb
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup beef or vegetable broth
- 2 tbsp tomato paste
- 1 tsp thyme
- Salt and pepper to taste
- 2 tbsp butter or margarine
Instructions
- Boil the diced breadfruit in salted water until tender, then drain and mash with butter. Set aside.
- In a large skillet, brown the ground meat with the chopped onion and garlic. Drain any excess fat.
- Add the beef or vegetable broth, tomato paste, thyme, salt, and pepper to the skillet. Simmer for 10 minutes.
- Spread the mashed breadfruit in the bottom of a greased baking dish. Spoon the meat mixture on top.
- Bake in a preheated oven at 375°F for 25 minutes, or until the top is golden brown.
