Breadfruit Shepherd's Pie

Ingredients

  • 2 large breadfruits, peeled and diced
  • 1 lb ground beef or lamb
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup beef or vegetable broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp butter or margarine

Instructions

  1. Boil the diced breadfruit in salted water until tender, then drain and mash with butter. Set aside.
  2. In a large skillet, brown the ground meat with the chopped onion and garlic. Drain any excess fat.
  3. Add the beef or vegetable broth, tomato paste, thyme, salt, and pepper to the skillet. Simmer for 10 minutes.
  4. Spread the mashed breadfruit in the bottom of a greased baking dish. Spoon the meat mixture on top.
  5. Bake in a preheated oven at 375°F for 25 minutes, or until the top is golden brown.
