Ingredients
- 1 ripe breadfruit, peeled and diced
- 1 can (14 oz) coconut milk
- 4 cups vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp turmeric
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté the onion, garlic, and ginger until fragrant.
- Add the diced breadfruit and turmeric, and stir to coat the breadfruit with the aromatics.
- Pour in the coconut milk and vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the breadfruit is tender.
- Using an immersion blender, blend the soup until smooth and creamy. If you don't have an immersion blender, carefully transfer the soup to a blender in batches and blend until smooth.
- Season the soup with salt and pepper to taste.
