Ingredients

  • 1 cup jent (cracked wheat)
  • 1 onion, finely chopped
  • 2 carrots, grated
  • 1/2 cup dried apricots, chopped
  • 1/4 cup vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 cups water

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and grated carrots, and cook until the vegetables are soft, about 5 minutes.
  3. Add the jent and dried apricots to the pot, and stir to combine with the vegetables.
  4. Pour in the water, add the salt and black pepper, and bring the mixture to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 1 hour, or until the jent is tender and the liquid is absorbed.
  6. Fluff the jent with a fork before serving.
