This traditional Kyrgyz dish, called "Жент с курагой" or Breathtaking Jent with Dried Apricots, is a flavorful and hearty meal that is perfect for a cozy dinner with family and friends.
Ingredients
- 1 cup jent (cracked wheat)
- 1 onion, finely chopped
- 2 carrots, grated
- 1/2 cup dried apricots, chopped
- 1/4 cup vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 4 cups water
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and grated carrots, and cook until the vegetables are soft, about 5 minutes.
- Add the jent and dried apricots to the pot, and stir to combine with the vegetables.
- Pour in the water, add the salt and black pepper, and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for 1 hour, or until the jent is tender and the liquid is absorbed.
- Fluff the jent with a fork before serving.
