Ingredients
- 500g stewing beef, diced
- 2 onions, chopped
- 2 carrots, sliced
- 2 celery sticks, chopped
- 2 garlic cloves, minced
- 2 tbsp flour
- 500ml ale
- 300ml beef stock
- 2 bay leaves
- Salt and pepper to taste
- 500g puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- In a large pot, brown the diced beef in some oil over medium-high heat.
- Add the onions, carrots, celery, and garlic to the pot. Cook for 5 minutes until the vegetables start to soften.
- Sprinkle the flour over the beef and vegetables, then stir to coat everything evenly.
- Pour in the ale and beef stock, then add the bay leaves. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 1.5 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
- Preheat the oven to 200°C (400°F).
- Transfer the beef filling to a pie dish and allow it to cool slightly.
- Roll out the puff pastry on a floured surface to fit the pie dish. Place it over the filling, trim any excess pastry, and crimp the edges to seal.
- Brush the pastry with the beaten egg to create a golden crust.
- Make a few slits in the pastry to allow steam to escape during baking.
- Bake the pie in the preheated oven for 25-30 minutes, or until the pastry is puffed and golden.
