Brechfa Beef And Stilton Wellington

Ingredients

  • 1.5 pounds beef tenderloin
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup Stilton cheese, crumbled
  • 1 sheet puff pastry, thawed
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the beef tenderloin with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Sear the beef on all sides until browned. Remove from the skillet and let it cool.
  4. In the same skillet, sauté the chopped onion and garlic until softened. Remove from heat and let it cool.
  5. Roll out the puff pastry on a floured surface to a size large enough to wrap the beef.
  6. Sprinkle the crumbled Stilton cheese over the pastry, leaving space around the edges.
  7. Spread the sautéed onion and garlic over the cheese.
  8. Place the seared beef on top of the onion and garlic mixture.
  9. Wrap the puff pastry around the beef, sealing the edges. Brush the pastry with the beaten egg.
  10. Place the wrapped beef on a baking sheet and bake for 25-30 minutes, or until the pastry is golden brown and the beef reaches your desired level of doneness.
  11. Let the Wellington rest for a few minutes before slicing and serving.
