Brezeln (bavarian Pretzel Perfection)

Ingredients
- 1 1/2 cups warm water
- 1 tablespoon granulated sugar
- 2 teaspoons kosher salt
- 1 packet active dry yeast
- 4 1/2 cups all-purpose flour
- 4 cups water
- 1/4 cup baking soda
- Coarse sea salt, for sprinkling
Instructions
- In a mixing bowl, combine the warm water, sugar, and kosher salt. Sprinkle the yeast on top and let it sit for 5 minutes, until it becomes foamy.
- Add the flour and mix until the dough comes together. Knead the dough for 5 minutes, then place it in a greased bowl and let it rise for 1 hour.
- Preheat the oven to 450°F (230°C). In a large pot, bring the 4 cups of water and baking soda to a boil.
- Divide the dough into 8 equal pieces and roll each piece into a long rope. Shape the ropes into pretzels.
- Boil each pretzel in the water mixture for 30 seconds, then place them on a baking sheet. Sprinkle with coarse sea salt.
- Bake the pretzels for 12-14 minutes, until they are golden brown. Let them cool slightly before serving.
