Bringhe Bites
Bringhe Bites are a delightful twist on the classic Kapampangan dish, Bringhe. These bite-sized treats are perfect for parties, gatherings, or as a tasty snack.
Ingredients
- 2 cups glutinous rice
- 1 cup coconut milk
- 1 cup chicken, cooked and shredded
- 1/2 cup chorizo, sliced
- 1/2 cup bell peppers, diced
- 1/4 cup raisins
- 1/4 cup green peas
- 1/4 cup cashews, chopped
- 3 tablespoons fish sauce
- 2 tablespoons turmeric
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 24 pieces banana leaves, cut into 5x5 inch squares
Instructions
- In a large bowl, combine glutinous rice, coconut milk, turmeric, salt, and ground black pepper. Mix well.
- Place a banana leaf square on a flat surface. Scoop 2 tablespoons of the rice mixture onto the center of the leaf and spread it out to form a small square.
- Top the rice with a portion of shredded chicken, sliced chorizo, diced bell peppers, raisins, green peas, and chopped cashews.
- Wrap the banana leaf to form a neat packet, then secure with a toothpick.
- Repeat the process for the remaining ingredients.
- In a large pot, arrange the wrapped bringhe bites and add enough water to cover the bottom of the pot. Cover and steam for 30 minutes.
- Once cooked, remove the bringhe bites from the pot and let them cool for a few minutes before serving.
