Bringhe Bites are a delightful twist on the classic Kapampangan dish, Bringhe. These bite-sized treats are perfect for parties, gatherings, or as a tasty snack.

Bringhe Bites

Ingredients

  • 2 cups glutinous rice
  • 1 cup coconut milk
  • 1 cup chicken, cooked and shredded
  • 1/2 cup chorizo, sliced
  • 1/2 cup bell peppers, diced
  • 1/4 cup raisins
  • 1/4 cup green peas
  • 1/4 cup cashews, chopped
  • 3 tablespoons fish sauce
  • 2 tablespoons turmeric
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 24 pieces banana leaves, cut into 5x5 inch squares

Instructions

  1. In a large bowl, combine glutinous rice, coconut milk, turmeric, salt, and ground black pepper. Mix well.
  2. Place a banana leaf square on a flat surface. Scoop 2 tablespoons of the rice mixture onto the center of the leaf and spread it out to form a small square.
  3. Top the rice with a portion of shredded chicken, sliced chorizo, diced bell peppers, raisins, green peas, and chopped cashews.
  4. Wrap the banana leaf to form a neat packet, then secure with a toothpick.
  5. Repeat the process for the remaining ingredients.
  6. In a large pot, arrange the wrapped bringhe bites and add enough water to cover the bottom of the pot. Cover and steam for 30 minutes.
  7. Once cooked, remove the bringhe bites from the pot and let them cool for a few minutes before serving.
