Briouat (spicy Shrimp Pilaf)

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup basmati rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • 12 sheets phyllo pastry
  • 1/4 cup melted butter

Instructions

  1. In a large skillet, sauté the onion and garlic until softened.
  2. Add the shrimp to the skillet and cook until pink and opaque.
  3. Stir in the cumin, paprika, cayenne pepper, and rice. Cook for 2 minutes.
  4. Pour in 2 cups of water and bring to a boil. Reduce heat, cover, and simmer for 15 minutes or until the rice is tender.
  5. Stir in the cilantro and season with salt and pepper. Let the pilaf cool.
  6. Preheat the oven to 375°F (190°C). Lay out one sheet of phyllo pastry and brush with melted butter. Place a spoonful of the shrimp pilaf in the corner of the pastry and fold into a triangle. Continue with the remaining pastry and filling.
  7. Place the briouats on a baking sheet and bake for 15-20 minutes or until golden and crispy.
