Briouat (spicy Shrimp Pilaf)
Briouat is a popular dish in Berber cuisine, typically made with a savory filling wrapped in thin pastry. This recipe puts a spicy twist on the traditional shrimp pilaf filling, creating a delicious and flavorful appetizer or snack.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup basmati rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- 12 sheets phyllo pastry
- 1/4 cup melted butter
Instructions
- In a large skillet, sauté the onion and garlic until softened.
- Add the shrimp to the skillet and cook until pink and opaque.
- Stir in the cumin, paprika, cayenne pepper, and rice. Cook for 2 minutes.
- Pour in 2 cups of water and bring to a boil. Reduce heat, cover, and simmer for 15 minutes or until the rice is tender.
- Stir in the cilantro and season with salt and pepper. Let the pilaf cool.
- Preheat the oven to 375°F (190°C). Lay out one sheet of phyllo pastry and brush with melted butter. Place a spoonful of the shrimp pilaf in the corner of the pastry and fold into a triangle. Continue with the remaining pastry and filling.
- Place the briouats on a baking sheet and bake for 15-20 minutes or until golden and crispy.
