Ingredients

  • 1 gallon water
  • 1 cup kosher salt
  • 1/2 cup brown sugar
  • 2 tablespoons whole black peppercorns
  • 1 tablespoon mustard seeds
  • 4 bay leaves
  • 4 cloves garlic, smashed

Instructions

  1. In a large pot, combine the water, kosher salt, brown sugar, black peppercorns, mustard seeds, bay leaves, and garlic.
  2. Stir the mixture until the salt and sugar are fully dissolved.
  3. Place the brisket in a large resealable plastic bag or a non-reactive container.
  4. Pour the brine over the brisket, making sure it is fully submerged.
  5. Seal the bag or cover the container and refrigerate for at least 24 hours, or up to 48 hours.
  6. Remove the brisket from the brine, rinse it thoroughly with cold water, and pat it dry before cooking.
