British Curry (chicken Tikka Masala)
British Curry, also known as Chicken Tikka Masala, is a popular dish in British cuisine that combines tender pieces of chicken with a rich and flavorful tomato-based sauce. This recipe is a delicious and comforting dish that is perfect for a cozy night in.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup plain yogurt
- 2 tbsp lemon juice
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground turmeric
- 1 tsp garam masala
- 1/2 tsp cayenne pepper
- 1/2 tsp salt
- 3 tbsp vegetable oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 1/2 cups tomato puree
- 1 cup heavy cream
- 2 tbsp unsalted butter
- 2 tbsp chopped fresh cilantro, for garnish
Instructions
- In a large bowl, combine the yogurt, lemon juice, cumin, coriander, turmeric, garam masala, cayenne pepper, and salt. Add the chicken pieces and toss to coat. Cover and refrigerate for at least 1 hour, or overnight.
- In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the marinated chicken pieces and cook until browned and cooked through, about 8-10 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add the chopped onion and cook until softened, about 5 minutes. Add the garlic and ginger, and cook for an additional 2 minutes.
- Stir in the tomato puree and cook for 5 minutes, stirring occasionally. Add the heavy cream and butter, and simmer for 10 minutes, stirring occasionally.
- Return the cooked chicken to the skillet and simmer for an additional 5 minutes, allowing the flavors to meld together. Garnish with chopped cilantro before serving.
