British Curry (chicken Tikka Masala)

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tbsp lemon juice
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp garam masala
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 3 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 1/2 cups tomato puree
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • 2 tbsp chopped fresh cilantro, for garnish

Instructions

  1. In a large bowl, combine the yogurt, lemon juice, cumin, coriander, turmeric, garam masala, cayenne pepper, and salt. Add the chicken pieces and toss to coat. Cover and refrigerate for at least 1 hour, or overnight.
  2. In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the marinated chicken pieces and cook until browned and cooked through, about 8-10 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add the chopped onion and cook until softened, about 5 minutes. Add the garlic and ginger, and cook for an additional 2 minutes.
  4. Stir in the tomato puree and cook for 5 minutes, stirring occasionally. Add the heavy cream and butter, and simmer for 10 minutes, stirring occasionally.
  5. Return the cooked chicken to the skillet and simmer for an additional 5 minutes, allowing the flavors to meld together. Garnish with chopped cilantro before serving.
