Brochettes (grilled Lamb Skewers)

Ingredients
- 1 1/2 pounds of lamb, cut into 1-inch cubes
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 teaspoon of ground cumin
- 1 teaspoon of paprika
- 1/2 teaspoon of ground coriander
- 1/4 teaspoon of cayenne pepper
- Salt and pepper to taste
- 2 tablespoons of olive oil
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine the lamb, onion, garlic, cumin, paprika, coriander, cayenne pepper, salt, pepper, and olive oil. Mix well to ensure the lamb is evenly coated with the spices. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated lamb onto the soaked wooden skewers.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
