Ingredients

  • 1 1/2 pounds boneless lamb, cut into 1-inch cubes
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. In a bowl, combine the chopped onion, minced garlic, olive oil, cumin, paprika, coriander, cayenne pepper, salt, and pepper.
  2. Add the lamb cubes to the bowl and toss to coat the meat evenly with the spice mixture. Marinate for at least 1 hour in the refrigerator.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece.
  5. Preheat the grill to medium-high heat. Grill the brochettes for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
  6. Remove the brochettes from the grill and let them rest for a few minutes before serving.
