Ingredients

  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup fish or vegetable broth
  • 1/2 cup white wine
  • 1 bay leaf
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the diced tomatoes, fish or vegetable broth, white wine, bay leaf, and dried oregano to the pot. Bring the mixture to a simmer.
  3. Gently add the mixed seafood to the pot, and season with salt and pepper. Cover and let the stew simmer for about 20-25 minutes, or until the seafood is cooked through.
