Ingredients

  • 4 cups fish or seafood broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  2. Add the diced tomatoes and cook for a few minutes until they start to break down.
  3. Pour in the white wine and let it simmer for 2-3 minutes to cook off the alcohol.
  4. Add the seafood broth and bring the mixture to a boil.
  5. Gently add the mixed seafood to the pot and simmer for about 5-7 minutes until the seafood is cooked through.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped fresh parsley before serving.
