Ingredients
- 500g mixed seafood (shrimp, clams, mussels, squid)
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 tomatoes, diced
- 1/2 cup white wine
- 4 cups fish or seafood broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
- Add the diced tomatoes and cook for a few minutes until they start to break down.
- Pour in the white wine and let it simmer for 2-3 minutes to cook off the alcohol.
- Add the seafood broth and bring the mixture to a boil.
- Gently add the mixed seafood to the pot and simmer for about 5-7 minutes until the seafood is cooked through.
- Season with salt and pepper to taste.
- Garnish with chopped fresh parsley before serving.
