Brothy Rice (arroz Caldoso)
Brothy Rice, known as Arroz Caldoso in Valencian cuisine, is a delicious and comforting dish that is perfect for a cozy meal. This recipe brings together the flavors of rice, seafood, and aromatic spices in a flavorful broth.
Ingredients
- 1 cup short-grain rice
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tomato, grated
- 1 red bell pepper, diced
- 8 cups fish or seafood stock
- 1 lb mixed seafood (such as shrimp, mussels, and squid)
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat some olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the grated tomato and diced bell pepper, and cook for a few minutes until the vegetables are tender.
- Stir in the rice and smoked paprika, and cook for a couple of minutes to toast the rice.
- Pour in the fish or seafood stock and bring the mixture to a boil. Reduce the heat to a simmer and cook for about 15 minutes, stirring occasionally.
- Add the mixed seafood to the pot and continue to cook for another 10-15 minutes, or until the rice is tender and the seafood is cooked through.
- Season with salt and pepper to taste. Serve the brothy rice hot, garnished with fresh parsley.
