Ingredients

  • 1 cup short-grain rice
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tomato, grated
  • 1 red bell pepper, diced
  • 8 cups fish or seafood stock
  • 1 lb mixed seafood (such as shrimp, mussels, and squid)
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat some olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the grated tomato and diced bell pepper, and cook for a few minutes until the vegetables are tender.
  3. Stir in the rice and smoked paprika, and cook for a couple of minutes to toast the rice.
  4. Pour in the fish or seafood stock and bring the mixture to a boil. Reduce the heat to a simmer and cook for about 15 minutes, stirring occasionally.
  5. Add the mixed seafood to the pot and continue to cook for another 10-15 minutes, or until the rice is tender and the seafood is cooked through.
  6. Season with salt and pepper to taste. Serve the brothy rice hot, garnished with fresh parsley.
