Ingredients

  • 4 large sweet potatoes, peeled and cubed
  • 1/2 cup brown sugar
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans
  • 1/2 cup all-purpose flour
  • 1/4 cup white sugar
  • 1/4 cup melted butter

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place sweet potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15 minutes. Drain and mash.
  3. In a large bowl, mix together the mashed sweet potatoes, brown sugar, eggs, milk, 1/4 cup melted butter, and vanilla extract. Spread into a 9x13 inch baking dish.
  4. In a separate bowl, mix together the chopped pecans, flour, white sugar, and 1/4 cup melted butter. Sprinkle over the sweet potato mixture.
  5. Bake for 25 minutes in the preheated oven, or until golden brown.
