Bruschetta Chicken Pasta

Ingredients
- 8 oz penne pasta
- 2 boneless, skinless chicken breasts
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1/4 cup balsamic vinegar
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- Season the chicken breasts with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken and cook for 6-7 minutes per side, or until fully cooked. Remove from the skillet and let it rest for 5 minutes before slicing.
- In the same skillet, add the remaining olive oil and minced garlic. Cook for 1-2 minutes until fragrant.
- Add the cherry tomatoes and cook for 3-4 minutes, or until they start to soften.
- Stir in the balsamic vinegar and cooked pasta. Cook for an additional 2-3 minutes, allowing the flavors to combine.
- Remove from heat and stir in the fresh basil. Season with additional salt and pepper if needed.
- Serve the sliced chicken on top of the bruschetta pasta.
