Bruschetta Chicken Pasta

Ingredients

  • 8 oz penne pasta
  • 2 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. Season the chicken breasts with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken and cook for 6-7 minutes per side, or until fully cooked. Remove from the skillet and let it rest for 5 minutes before slicing.
  3. In the same skillet, add the remaining olive oil and minced garlic. Cook for 1-2 minutes until fragrant.
  4. Add the cherry tomatoes and cook for 3-4 minutes, or until they start to soften.
  5. Stir in the balsamic vinegar and cooked pasta. Cook for an additional 2-3 minutes, allowing the flavors to combine.
  6. Remove from heat and stir in the fresh basil. Season with additional salt and pepper if needed.
  7. Serve the sliced chicken on top of the bruschetta pasta.
