Ingredients

  • 1 cup black glutinous rice
  • 4 cups water
  • 1 pandan leaf, tied in a knot
  • 1 cup coconut milk
  • 1/2 cup palm sugar, grated
  • 1/4 tsp salt

Instructions

  1. Rinse the black glutinous rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice, water, and pandan leaf. Bring to a boil, then reduce heat to low and simmer for 45 minutes, or until the rice is tender.
  3. Stir in the coconut milk, palm sugar, and salt. Cook for an additional 15 minutes, stirring occasionally, until the pudding thickens.
  4. Remove the pandan leaf and discard. Serve the Bubur Ketan Hitam warm or chilled.
