Ingredients
- 2 cups rice
- 1 cup chicken, diced
- 1 cup carrots, diced
- 1 cup potatoes, diced
- 1 cup onions, chopped
- 1/2 cup garlic, minced
- 1/4 cup ginger, grated
- 1/4 cup lemongrass, sliced
- 1/4 cup dried shrimp
- 1/4 cup coconut milk
- 8 cups water
- Salt to taste
Instructions
- Wash the rice and drain well.
- In a large pot, combine the rice, chicken, carrots, potatoes, onions, garlic, ginger, lemongrass, dried shrimp, and water.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 1 hour, stirring occasionally.
- Stir in the coconut milk and salt, and continue to simmer for another 10 minutes.
- Adjust the seasoning if needed, and serve hot.
