Bubur Lambuk Fiesta

Ingredients

  • 2 cups rice
  • 1 cup chicken, diced
  • 1 cup carrots, diced
  • 1 cup potatoes, diced
  • 1 cup onions, chopped
  • 1/2 cup garlic, minced
  • 1/4 cup ginger, grated
  • 1/4 cup lemongrass, sliced
  • 1/4 cup dried shrimp
  • 1/4 cup coconut milk
  • 8 cups water
  • Salt to taste

Instructions

  1. Wash the rice and drain well.
  2. In a large pot, combine the rice, chicken, carrots, potatoes, onions, garlic, ginger, lemongrass, dried shrimp, and water.
  3. Bring the mixture to a boil, then reduce the heat and let it simmer for 1 hour, stirring occasionally.
  4. Stir in the coconut milk and salt, and continue to simmer for another 10 minutes.
  5. Adjust the seasoning if needed, and serve hot.
