Bubur Lambuk Fusion

Ingredients

  • 1 cup white rice
  • 500ml coconut milk
  • 500ml chicken broth
  • 1 cinnamon stick
  • 3 cardamom pods
  • 1 star anise
  • 1 lemongrass stalk, bruised
  • 200g chicken, diced
  • 1/2 cup diced carrots
  • 1/2 cup diced potatoes
  • 1/4 cup fried shallots
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse the rice and drain well.
  2. In a large pot, combine the rice, coconut milk, chicken broth, cinnamon stick, cardamom pods, star anise, and lemongrass. Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
  3. Add the diced chicken, carrots, and potatoes. Continue to simmer for another 20 minutes or until the rice and chicken are fully cooked.
  4. Season with salt and pepper to taste.
  5. Serve the Bubur Lambuk Fusion in bowls, garnished with fried shallots.
