Buckwheat Bliss (Гречка с грибами)

Ingredients

  • 2 cups buckwheat
  • 4 cups water
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Rinse the buckwheat under cold water and drain.
  2. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until softened.
  3. Add the mushrooms to the pot and cook until they release their moisture and become golden brown.
  4. Add the buckwheat to the pot and stir to combine with the mushrooms and onions.
  5. Pour in the water and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the buckwheat is tender and the liquid is absorbed.
  6. Fluff the buckwheat with a fork and serve hot.
