Ingredients
- 2 cups buckwheat
- 4 cups water
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 cups mushrooms, sliced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Rinse the buckwheat under cold water and drain.
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the mushrooms to the pot and cook until they release their moisture and become golden brown.
- Add the buckwheat to the pot and stir to combine with the mushrooms and onions.
- Pour in the water and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the buckwheat is tender and the liquid is absorbed.
- Fluff the buckwheat with a fork and serve hot.
