Ingredients

  • 2 cups buckwheat
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 2 carrots, diced
  • 1 bell pepper, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil

Instructions

  1. Rinse the buckwheat under cold water and drain.
  2. In a large pot, heat the vegetable oil over medium heat. Add the onion and garlic, and sauté until fragrant.
  3. Add the mushrooms, carrots, and bell pepper to the pot. Cook for 5-7 minutes, stirring occasionally.
  4. Stir in the buckwheat, salt, and black pepper. Pour in the water and bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the buckwheat is tender and the liquid is absorbed.
  6. Fluff the buckwheat with a fork before serving.
