Ingredients
- 2 cups buckwheat
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups mushrooms, sliced
- 2 carrots, diced
- 1 bell pepper, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
Instructions
- Rinse the buckwheat under cold water and drain.
- In a large pot, heat the vegetable oil over medium heat. Add the onion and garlic, and sauté until fragrant.
- Add the mushrooms, carrots, and bell pepper to the pot. Cook for 5-7 minutes, stirring occasionally.
- Stir in the buckwheat, salt, and black pepper. Pour in the water and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the buckwheat is tender and the liquid is absorbed.
- Fluff the buckwheat with a fork before serving.
