Ingredients
- 2 cups buckwheat groats
- 4 cups water
- 1 onion, finely chopped

Instructions
- Rinse the buckwheat groats under cold water.
- In a pot, bring the water to a boil and add the rinsed buckwheat groats. Reduce the heat to low, cover, and simmer for 15-20 minutes or until the water is absorbed and the buckwheat is tender.
- In a separate pan, melt the butter over medium heat. Add the chopped onion and cook until translucent.
- Add the sliced mushrooms to the pan and sauté until they are golden brown and tender.
- Once the buckwheat is cooked, fluff it with a fork and add the sautéed mushrooms and onions. Mix well and season with salt and pepper to taste.
