Buckwheat Porridge with Mushrooms (Griķu putra ar sēnēm)

Ingredients

  • 2 cups buckwheat groats
  • 4 cups water
  • 1 onion, finely chopped
  • 2 cups mixed mushrooms, sliced
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the water to a boil and add the buckwheat groats. Reduce the heat to low, cover, and simmer for 15 minutes.
  2. In a separate pan, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the sliced mushrooms to the pan and cook until they are tender and golden brown.
  4. Once the buckwheat is cooked, fluff it with a fork and add the sautéed mushrooms and onions. Season with salt and pepper to taste.
  5. Stir everything together and let it simmer for an additional 5 minutes.
  6. Remove from heat and let it sit for a few minutes before serving.
