Ingredients
- 1 block of firm tofu, cubed
- 2 cups of sliced shiitake mushrooms
- 1 cup of sliced carrots
- 1 cup of sliced bamboo shoots
- 1 cup of sliced water chestnuts
- 1 cup of sliced bok choy
- 1/2 cup of sliced snow peas
- 1/4 cup of soy sauce
- 2 tablespoons of hoisin sauce
- 1 tablespoon of sesame oil
- 4 cups of vegetable broth
- 3 cloves of garlic, minced
- 1 tablespoon of cornstarch
- Salt and pepper to taste
Instructions
- Press the tofu to remove excess water, then cut it into cubes.
- In a large pot, heat the sesame oil over medium heat and sauté the garlic until fragrant.
- Add the tofu, mushrooms, carrots, bamboo shoots, water chestnuts, and bok choy to the pot, and stir-fry for 5 minutes.
- In a small bowl, mix the soy sauce, hoisin sauce, and cornstarch with vegetable broth, then pour the mixture into the pot.
- Bring the pot to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the vegetables are tender and the sauce has thickened.
- Season with salt and pepper to taste, then add the snow peas and cook for an additional 2-3 minutes.
