Buddha's Delight Clay Pot Rice

Ingredients

  • 2 cups jasmine rice
  • 1 cup mixed vegetables (carrots, snow peas, baby corn, bok choy)
  • 1 cup shiitake mushrooms, sliced
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, minced
  • 1 teaspoon garlic, minced
  • 1/4 cup green onions, chopped

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. Drain well.
  2. In a clay pot, combine the rice, mixed vegetables, shiitake mushrooms, vegetable broth, soy sauce, sesame oil, ginger, and garlic.
  3. Cover the clay pot and bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low and let it simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  4. Remove the clay pot from the heat and let it sit, covered, for an additional 5 minutes.
