Ingredients

  • 1 block firm tofu, cubed
  • 1 cup shiitake mushrooms, sliced
  • 1 cup bok choy, chopped
  • 1 cup bamboo shoots, sliced
  • 1 cup carrots, sliced
  • 1 cup snow peas
  • 4 cups vegetable broth
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced
  • 1/2 tsp white pepper
  • 1/4 cup green onions, chopped (for garnish)

Instructions

  1. Prepare all the ingredients as listed.
  2. In a large pot, combine the vegetable broth, soy sauce, rice vinegar, sesame oil, ginger, garlic, and white pepper. Bring to a simmer over medium heat.
  3. Add the tofu, mushrooms, bok choy, bamboo shoots, carrots, and snow peas to the pot. Let it simmer for 15-20 minutes until the vegetables are tender.
  4. Once cooked, ladle the hot pot into individual bowls and garnish with chopped green onions.
