Ingredients
- 1 block firm tofu, cubed
- 1 cup shiitake mushrooms, sliced
- 1 cup bok choy, chopped
- 1 cup bamboo shoots, sliced
- 1 cup carrots, sliced
- 1 cup snow peas
- 4 cups vegetable broth
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp ginger, minced
- 1 tsp garlic, minced
- 1/2 tsp white pepper
- 1/4 cup green onions, chopped (for garnish)
Instructions
- Prepare all the ingredients as listed.
- In a large pot, combine the vegetable broth, soy sauce, rice vinegar, sesame oil, ginger, garlic, and white pepper. Bring to a simmer over medium heat.
- Add the tofu, mushrooms, bok choy, bamboo shoots, carrots, and snow peas to the pot. Let it simmer for 15-20 minutes until the vegetables are tender.
- Once cooked, ladle the hot pot into individual bowls and garnish with chopped green onions.
