Ingredients

  • 8 oz rice noodles
  • 2 cups broccoli florets
  • 1 cup sliced carrots
  • 1 red bell pepper, thinly sliced
  • 1 cup snow peas
  • 1 cup sliced mushrooms
  • 3 garlic cloves, minced
  • 1 tbsp grated ginger
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 1/4 cup vegetable broth
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro

Instructions

  1. Prepare the rice noodles according to the package instructions. Drain and set aside.
  2. In a large wok or skillet, heat the sesame oil over medium heat. Add the garlic and ginger, and stir-fry for 1 minute.
  3. Add the broccoli, carrots, bell pepper, snow peas, and mushrooms to the wok. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  4. In a small bowl, whisk together the soy sauce, hoisin sauce, and vegetable broth. Pour the sauce over the vegetables and toss to coat.
  5. Add the cooked rice noodles to the wok and toss to combine with the vegetables and sauce.
  6. Remove from heat and garnish with chopped green onions and cilantro before serving.
