Ingredients

  • 8 oz udon noodles

  • 1 cup sliced bok choy
  • 1/2 cup sliced bamboo shoots
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup chopped green onions

Instructions

  1. In a large pot, bring the vegetable broth to a boil.
  2. Add the udon noodles and cook according to the package instructions.
  3. While the noodles are cooking, heat the sesame oil in a skillet over medium heat.
  4. Add the garlic, ginger, and red pepper flakes, and sauté for 1-2 minutes.
  5. Add the shiitake mushrooms, carrots, bok choy, and bamboo shoots to the skillet, and cook for 3-4 minutes.
