Ingredients

  • 4 medium-sized squid, cleaned
  • 1 fennel bulb, finely chopped
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 can (400g) crushed tomatoes
  • 1/2 cup white wine
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the chopped fennel, onion, and garlic. Cook until softened, about 5 minutes.
  2. Stir in the white wine and crushed tomatoes. Simmer for 10 minutes, then season with salt and pepper.
  3. Meanwhile, prepare the squid by stuffing them with the fennel mixture and securing the openings with toothpicks.
  4. Heat the remaining olive oil in a separate pan over medium-high heat. Sear the stuffed squid for 2-3 minutes on each side.
  5. Transfer the seared squid to the pan with the tomato sauce. Cover and simmer for 20-25 minutes, or until the squid is tender.
  6. Sprinkle with fresh parsley before serving.
