Ingredients
- 4 medium-sized squid, cleaned
- 1 fennel bulb, finely chopped
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 can (400g) crushed tomatoes
- 1/2 cup white wine
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of olive oil in a pan over medium heat. Add the chopped fennel, onion, and garlic. Cook until softened, about 5 minutes.
- Stir in the white wine and crushed tomatoes. Simmer for 10 minutes, then season with salt and pepper.
- Meanwhile, prepare the squid by stuffing them with the fennel mixture and securing the openings with toothpicks.
- Heat the remaining olive oil in a separate pan over medium-high heat. Sear the stuffed squid for 2-3 minutes on each side.
- Transfer the seared squid to the pan with the tomato sauce. Cover and simmer for 20-25 minutes, or until the squid is tender.
- Sprinkle with fresh parsley before serving.
