Buka Masala (coconut And Pumpkin Curry)
Buka Masala is a traditional Melanesian dish that combines the rich flavors of coconut and pumpkin with aromatic spices. This hearty and flavorful curry is perfect for a cozy dinner on a chilly evening.
Ingredients
- 1 small pumpkin, peeled and diced
- 1 can (400ml) coconut milk
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 red chili, finely chopped
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp cooking oil
- 2 cups cooked rice, for serving
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the chopped onion, garlic, ginger, and red chili. Sauté until the onion is soft and translucent.
- Add the ground turmeric, cumin, coriander, and paprika to the pot. Stir well to coat the aromatics with the spices.
- Add the diced pumpkin to the pot and stir to combine with the spices and aromatics.
- Pour in the coconut milk and season with salt and pepper. Stir to combine all the ingredients.
- Reduce the heat to low and let the curry simmer for 30-35 minutes, or until the pumpkin is tender and the flavors have melded together.
- Serve the Buka Masala over cooked rice and enjoy!
