Buka Masala (coconut And Pumpkin Curry)

Ingredients

  • 1 small pumpkin, peeled and diced
  • 1 can (400ml) coconut milk
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 red chili, finely chopped
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp cooking oil
  • 2 cups cooked rice, for serving

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the chopped onion, garlic, ginger, and red chili. Sauté until the onion is soft and translucent.
  2. Add the ground turmeric, cumin, coriander, and paprika to the pot. Stir well to coat the aromatics with the spices.
  3. Add the diced pumpkin to the pot and stir to combine with the spices and aromatics.
  4. Pour in the coconut milk and season with salt and pepper. Stir to combine all the ingredients.
  5. Reduce the heat to low and let the curry simmer for 30-35 minutes, or until the pumpkin is tender and the flavors have melded together.
  6. Serve the Buka Masala over cooked rice and enjoy!
