Ingredients
- 2 cups diced pumpkin
- 1 can (14 oz) coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 4 cups vegetable broth
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a large pot, sauté the onion, garlic, and ginger until fragrant.
- Add the diced pumpkin and cook for 5 minutes.
- Pour in the coconut milk and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Use an immersion blender to blend the soup until smooth. Season with salt and pepper to taste.
