Bulgarian Bouillabaisse: Riblja Chorba (Fisherman's Soup)
Fisherman's Soup, also known as Riblja Chorba, is a traditional Bulgarian fish soup that is rich in flavor and perfect for seafood lovers.
Ingredients
- 1 lb white fish fillets, cut into chunks
- 1 onion, chopped
- 2 tomatoes, diced
- 1 red bell pepper, chopped
- 3 garlic cloves, minced
- 1/4 cup olive oil
- 1/4 cup white wine
- 6 cups fish or vegetable broth
- 1 bay leaf
- 1 tsp paprika
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, garlic, and red pepper. Cook until softened, about 5 minutes.
- Stir in the tomatoes, white wine, and bay leaf. Cook for another 5 minutes.
- Pour in the fish or vegetable broth and bring to a simmer.
- Add the fish chunks and paprika. Season with salt and pepper.
- Cover and simmer for 30-40 minutes, until the fish is cooked through.
- Remove the bay leaf and discard.
- Serve the soup hot, garnished with chopped fresh parsley.
