Ingredients

  • 1 lb white fish fillets, cut into chunks
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 red bell pepper, chopped
  • 3 garlic cloves, minced
  • 1/4 cup olive oil
  • 1/4 cup white wine
  • 6 cups fish or vegetable broth
  • 1 bay leaf
  • 1 tsp paprika
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, garlic, and red pepper. Cook until softened, about 5 minutes.
  3. Stir in the tomatoes, white wine, and bay leaf. Cook for another 5 minutes.
  4. Pour in the fish or vegetable broth and bring to a simmer.
  5. Add the fish chunks and paprika. Season with salt and pepper.
  6. Cover and simmer for 30-40 minutes, until the fish is cooked through.
  7. Remove the bay leaf and discard.
  8. Serve the soup hot, garnished with chopped fresh parsley.
