Ingredients

- 1 bay leaf

Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and red bell pepper. Sauté for 5 minutes until the vegetables are softened.
- Add the minced garlic and paprika to the pot, and cook for an additional 2 minutes.
- Pour in the white wine and let it simmer for 3 minutes to reduce slightly.
- Add the diced tomatoes, potatoes, fish or vegetable broth, and bay leaf to the pot. Bring the soup to a boil, then reduce the heat and let it simmer for 15 minutes.
- Add the white fish chunks and mussels to the pot. Cover and cook for an additional 5-7 minutes, or until the mussels have opened and the fish is cooked through.
- Season the soup with salt and pepper to taste. Remove the bay leaf before serving.
- Garnish each serving with fresh parsley and serve hot.
