Ingredients

  • 1 lb pork shoulder, cubed
  • 1 lb chicken thighs, bone-in
  • 1 lb beef stew meat
  • 1 cup rice
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 1 red bell pepper, chopped
  • 1 cup sauerkraut
  • 1/2 cup tomato sauce
  • 1/4 cup vegetable oil
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 4 cups chicken broth

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until translucent.
  2. Add the pork, beef, and chicken to the pot, and brown the meat on all sides.
  3. Stir in the rice, carrots, bell pepper, sauerkraut, tomato sauce, paprika, black pepper, and salt.
  4. Pour the chicken broth over the meat and vegetables. Bring to a boil, then reduce the heat to low and simmer for 2-3 hours, until the meat is tender and the rice is cooked.
  5. Serve the Bulgarian casserole hot, garnished with fresh parsley if desired.
