Bulgarian Casserole, also known as Bulgarian Bouquet or Kapama, is a traditional Bulgarian dish that is perfect for gatherings and special occasions. This hearty casserole is made with a variety of meats, rice, and vegetables, all slow-cooked to perfection.
Ingredients
- 1 lb pork shoulder, cubed
- 1 lb chicken thighs, bone-in
- 1 lb beef stew meat
- 1 cup rice
- 1 large onion, chopped
- 2 carrots, sliced
- 1 red bell pepper, chopped
- 1 cup sauerkraut
- 1/2 cup tomato sauce
- 1/4 cup vegetable oil
- 1 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 4 cups chicken broth
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until translucent.
- Add the pork, beef, and chicken to the pot, and brown the meat on all sides.
- Stir in the rice, carrots, bell pepper, sauerkraut, tomato sauce, paprika, black pepper, and salt.
- Pour the chicken broth over the meat and vegetables. Bring to a boil, then reduce the heat to low and simmer for 2-3 hours, until the meat is tender and the rice is cooked.
- Serve the Bulgarian casserole hot, garnished with fresh parsley if desired.
