Ingredients

  • 1 lb (450g) pork shoulder, diced

  • 2 bell peppers, sliced
  • 3 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1/4 cup (60ml) white wine
  • 2 tbsp (30ml) vegetable oil
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the diced pork shoulder and cook until browned on all sides.
  3. Stir in the chopped onion and bell peppers, and cook until softened.
  4. Add the minced garlic, paprika, and cumin, and cook for another minute.
  5. Pour in the white wine and allow it to simmer for a few minutes.
  6. Add the chopped tomatoes, season with salt and pepper, and simmer for 45-50 minutes, or until the meat is tender.
  7. Adjust the seasoning if needed and serve the Bulgarian Stew hot.
