Bulgarski Kyopolou is a traditional Bulgarian spread made with roasted eggplant, peppers, and tomatoes. It is a popular dish in Balkan cuisine, often served as an appetizer or side dish.
Ingredients
- 2 large eggplants, roasted and peeled
- 2 red bell peppers, roasted and peeled
- 3 tomatoes, roasted and peeled
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
Instructions
- Finely chop the roasted eggplants, peppers, and tomatoes.
- In a large bowl, mix the chopped vegetables with the onion, garlic, olive oil, and red wine vinegar.
- Season with salt and pepper, then stir in the chopped parsley.
- Refrigerate for at least 1 hour before serving to allow the flavors to meld.
