Ingredients

  • 2 large eggplants, roasted and peeled
  • 2 red bell peppers, roasted and peeled

  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Finely chop the roasted eggplants, peppers, and tomatoes.
  2. In a large bowl, mix the chopped vegetables with the onion, garlic, olive oil, and red wine vinegar.
  3. Season with salt and pepper, then stir in the chopped parsley.
