Bulgogi Bibimbap (불고기 비빔밥)

Ingredients

  • 1 lb (450g) beef, thinly sliced
  • 1/4 cup (60ml) soy sauce
  • 2 tbsp (30ml) sesame oil
  • 2 tbsp (30g) sugar
  • 1/2 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 carrot, julienned
  • 1 zucchini, julienned
  • 4 cups (800g) cooked rice
  • 4 eggs
  • 4 tbsp (60g) gochujang (Korean red chili paste)
  • 4 tsp (20ml) sesame seeds
  • 4 tsp (20ml) vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the soy sauce, sesame oil, sugar, garlic, and sliced beef. Marinate for 20 minutes.
  2. Heat 1 teaspoon of vegetable oil in a pan over medium heat. Add the marinated beef and cook until browned. Set aside.
  3. In the same pan, add another teaspoon of vegetable oil and sauté the onion, carrot, and zucchini until tender. Season with salt and pepper. Set aside.
  4. In a separate pan, fry the eggs sunny-side up or to your desired doneness.
  5. To assemble the bibimbap, divide the cooked rice among 4 bowls. Arrange the cooked beef, sautéed vegetables, and fried egg on top of the rice.
  6. Place a spoonful of gochujang on the side of each bowl. Sprinkle with sesame seeds.
  7. Before eating, mix everything together thoroughly with a spoon, ensuring the gochujang is evenly distributed.
