Bulgogi Jeongol (불고기전골)

Ingredients

  • 500g thinly sliced beef (bulgogi cut)
  • 1 onion, thinly sliced
  • 2-3 green onions, cut into 2-inch pieces
  • 1 carrot, thinly sliced
  • 4 shiitake mushrooms, sliced
  • 100g enoki mushrooms, bottom part trimmed
  • 100g Korean glass noodles (dangmyeon)
  • 6 cups beef or vegetable broth
  • Marinade for beef: 1/4 cup soy sauce, 2 tbsp sugar, 1 tbsp sesame oil, 3 cloves garlic (minced), 1 tsp grated ginger, 1/4 tsp black pepper
  • For serving: Korean dipping sauce (ssamjang) and steamed rice

Instructions

  1. Marinate the thinly sliced beef in the marinade for at least 30 minutes.
  2. Prepare the vegetables and noodles.
  3. In a large pot or Korean hot pot (jeongol pan), arrange the marinated beef, vegetables, and glass noodles.
  4. Pour the broth over the ingredients in the pot.
  5. Cover and bring to a boil over medium-high heat, then reduce to a simmer and cook for 20-25 minutes.
  6. Serve the bulgogi jeongol hot pot with Korean dipping sauce and steamed rice.
