Bulgur and Chickpea Pilaf (Kısır)

Ingredients

  • 1 cup fine bulgur
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/2 red onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1/4 cup olive oil
  • 3 tablespoons pomegranate molasses
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the bulgur, chickpeas, parsley, mint, red onion, and tomatoes.
  2. In a small bowl, whisk together the olive oil, pomegranate molasses, cumin, paprika, salt, and pepper.
  3. Pour the dressing over the bulgur mixture and toss to combine.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Before serving, taste and adjust the seasoning if needed.
