Bulgur and Chickpea Pilaf (Kısır)
Kısır is a traditional Armenian dish made with bulgur, chickpeas, and a variety of herbs and spices. It is a flavorful and nutritious pilaf that can be served as a main dish or a side.
Ingredients
- 1 cup fine bulgur
- 1 can chickpeas, drained and rinsed
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/2 red onion, finely chopped
- 2 tomatoes, finely chopped
- 1/4 cup olive oil
- 3 tablespoons pomegranate molasses
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large bowl, combine the bulgur, chickpeas, parsley, mint, red onion, and tomatoes.
- In a small bowl, whisk together the olive oil, pomegranate molasses, cumin, paprika, salt, and pepper.
- Pour the dressing over the bulgur mixture and toss to combine.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, taste and adjust the seasoning if needed.
