Bunny Chow (siswati Bunny Chow)
Bunny Chow, also known as Siswati Bunny Chow, is a popular dish in Eswatini Cuisine. It consists of a hollowed-out loaf of bread filled with delicious curry.
Ingredients
- 1 large loaf of bread
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 can (400g) chickpeas, drained and rinsed
- 1 can (400g) chopped tomatoes
- Salt and pepper to taste
- Fresh coriander leaves for garnish
Instructions
- Start by cutting the loaf of bread into individual serving-sized portions and hollowing out the center to create a bowl-like shape.
- Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and garlic, and cook until softened.
- Stir in the curry powder, cumin, coriander, and turmeric, and cook for 1-2 minutes until fragrant.
- Add the chickpeas and chopped tomatoes to the pan, and season with salt and pepper. Simmer for 15-20 minutes until the curry has thickened.
- Divide the curry mixture among the hollowed-out bread loaves, garnish with fresh coriander leaves, and serve hot.
