Ingredients

  • 1 package of frozen phyllo dough, thawed
  • 1 pound fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the spinach, feta cheese, ricotta cheese, Parmesan cheese, eggs, salt, and black pepper.
  3. Unroll the phyllo dough and cut it into 3-inch strips.
  4. Place a spoonful of the spinach and cheese mixture at the end of each strip and fold into a triangle shape.
  5. Brush the triangles with olive oil and place them on a baking sheet.
  6. Bake for 20-25 minutes or until golden brown.
