Buridda (genovese Seafood Stew)
Buridda is a traditional Ligurian seafood stew that is rich in flavor and perfect for a special occasion or a cozy family meal.
Ingredients
- 1 lb mixed seafood (shrimp, squid, fish)
- 1/4 cup extra virgin olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1 lb tomatoes, peeled and chopped
- 1/2 cup fish stock
- 1/4 cup chopped parsley
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
- Add the mixed seafood to the pot and cook for 2-3 minutes.
- Pour in the white wine and let it simmer for 5 minutes.
- Add the tomatoes, fish stock, and parsley. Season with salt and pepper.
- Cover the pot and let the stew simmer for 30-35 minutes, stirring occasionally.
- Once the seafood is cooked through and the flavors have melded, the Buridda is ready to serve.
