Ingredients

  • 1 lb mixed seafood (shrimp, squid, fish)
  • 1/4 cup extra virgin olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 lb tomatoes, peeled and chopped
  • 1/2 cup fish stock
  • 1/4 cup chopped parsley
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the mixed seafood to the pot and cook for 2-3 minutes.
  3. Pour in the white wine and let it simmer for 5 minutes.
  4. Add the tomatoes, fish stock, and parsley. Season with salt and pepper.
  5. Cover the pot and let the stew simmer for 30-35 minutes, stirring occasionally.
  6. Once the seafood is cooked through and the flavors have melded, the Buridda is ready to serve.
