Ingredients
- 500g beef, thinly sliced
- 200g rice noodles
- 1 onion, finely chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 6 cups beef broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the onions, garlic, and ginger. Sauté until fragrant.
- Add the beef slices and cook until browned.
- Stir in the cumin, paprika, and turmeric. Cook for another minute.
- Pour in the beef broth and bring to a boil. Reduce heat and let it simmer for 1 hour.
- Add the carrots and potatoes. Simmer for another 30 minutes.
- Cook the rice noodles according to the package instructions.
- Divide the cooked noodles into serving bowls and ladle the hot soup over the noodles.
- Garnish with fresh cilantro and serve hot.
