Buryat Buckwheat Risotto (Buryat: Гурбаа)

Ingredients

  • 2 cups buckwheat groats
  • 4 cups chicken or vegetable broth
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup white wine
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pan, heat the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the buckwheat groats to the pan and toast for 2-3 minutes, stirring constantly.
  3. Pour in the white wine and cook until it has been absorbed by the buckwheat.
  4. Gradually add the broth, 1/2 cup at a time, stirring frequently and allowing the liquid to be absorbed before adding more.
  5. Once all the broth has been added and the buckwheat is tender, stir in the grated Parmesan cheese and season with salt and pepper.
  6. Remove from heat and let the risotto rest for a few minutes before serving.
