Buryat Buckwheat Sushi (Buryat: Гурбаа)

Ingredients

  • 2 cups buckwheat
  • 4 nori seaweed sheets
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1 avocado, sliced
  • 1/4 cup rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • Salt to taste

Instructions

  1. Rinse the buckwheat under cold water and cook according to package instructions. Let it cool.
  2. In a small bowl, mix the rice vinegar, soy sauce, sesame oil, sugar, and a pinch of salt to make the sushi seasoning.
  3. Place a nori sheet on a bamboo sushi mat. Spread a thin layer of cooked buckwheat over the nori, leaving a small border at the top.
  4. Arrange the julienned cucumber, carrot, and avocado slices on top of the buckwheat.
  5. Drizzle the sushi seasoning over the vegetables.
  6. Roll the sushi tightly using the bamboo mat, sealing the edge with a little water.
  7. Repeat with the remaining nori sheets and ingredients.
  8. Slice the sushi rolls into bite-sized pieces and serve with soy sauce for dipping.
