Ingredients
- 2 cups buckwheat
- 4 nori seaweed sheets
- 1 cucumber, julienned
- 1 carrot, julienned
- 1 avocado, sliced
- 1/4 cup rice vinegar
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp sugar
- Salt to taste
Instructions
- Rinse the buckwheat under cold water and cook according to package instructions. Let it cool.
- In a small bowl, mix the rice vinegar, soy sauce, sesame oil, sugar, and a pinch of salt to make the sushi seasoning.
- Place a nori sheet on a bamboo sushi mat. Spread a thin layer of cooked buckwheat over the nori, leaving a small border at the top.
- Arrange the julienned cucumber, carrot, and avocado slices on top of the buckwheat.
- Drizzle the sushi seasoning over the vegetables.
- Roll the sushi tightly using the bamboo mat, sealing the edge with a little water.
- Repeat with the remaining nori sheets and ingredients.
- Slice the sushi rolls into bite-sized pieces and serve with soy sauce for dipping.
