Ingredients
- 500g mixed mushrooms, sliced
- 3 large potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 carrot, diced
- 1 bay leaf
- 1 liter vegetable broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until fragrant.
- Add the mushrooms and cook until they release their liquid and start to brown.
- Stir in the diced potatoes, carrots, and bay leaf. Pour in the vegetable broth and bring the soup to a boil.
- Reduce the heat and simmer for 30 minutes, or until the potatoes are tender.
- Season the soup with salt and pepper to taste.
- Remove the bay leaf and serve the soup hot, garnished with fresh parsley.
