Buryat Mushroom and Potato Soup (Buryat: Чайрхан)

Ingredients

  • 500g mixed mushrooms, sliced
  • 3 large potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 1 bay leaf
  • 1 liter vegetable broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until fragrant.
  2. Add the mushrooms and cook until they release their liquid and start to brown.
  3. Stir in the diced potatoes, carrots, and bay leaf. Pour in the vegetable broth and bring the soup to a boil.
  4. Reduce the heat and simmer for 30 minutes, or until the potatoes are tender.
  5. Season the soup with salt and pepper to taste.
  6. Remove the bay leaf and serve the soup hot, garnished with fresh parsley.
