Buryat Mushroom Tart (Buryat: Чайрхан)
Buryat cuisine is known for its use of local ingredients and unique flavors. One popular dish is the Buryat Чайрхан, a savory mushroom tart that is perfect for any occasion.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup cold butter, cubed
- 1/4 cup cold water
- 1 onion, finely chopped
- 2 cups mushrooms, sliced
- 1/2 cup sour cream
- 2 eggs
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the flour and cold butter. Use your fingers to rub the butter into the flour until it resembles breadcrumbs.
- Add the cold water and mix until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Roll out the dough on a floured surface and transfer it to a tart pan. Press the dough into the pan and trim any excess.
- In a skillet, sauté the chopped onion and mushrooms until they are soft. Season with salt and pepper.
- In a separate bowl, whisk together the sour cream and eggs. Season with salt and pepper.
- Spoon the mushroom mixture into the tart shell and pour the sour cream mixture over the top.
- Bake for 45 minutes, or until the tart is golden and set.
- Let the tart cool for a few minutes before slicing and serving.
