Buryat Wild Mushroom Soup (Buryat: Чайрхан)
Buryat cuisine is known for its use of local ingredients, and one of the most popular dishes is the Чайрхан, a hearty wild mushroom soup that reflects the region's rich culinary traditions.
Ingredients
- 500g wild mushrooms, cleaned and sliced
- 1 onion, finely chopped
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 1 liter vegetable broth
- 2 tbsp butter
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the onions and sauté until translucent.
- Add the carrots and potatoes, and cook for 5 minutes.
- Add the mushrooms and cook until they release their liquid.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat and simmer for 20 minutes.
- Stir in the heavy cream and season with salt and pepper.
- Serve hot and enjoy!
