Bush Tucker Quinoa Salad

Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup roasted macadamia nuts
- 2 tbsp lemon juice
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water and drain.
- In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit for 5 minutes. Fluff with a fork and let it cool.
- In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, and macadamia nuts.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour over the quinoa mixture and toss to combine.
- Refrigerate for at least 30 minutes before serving.
